Fresh Salad

There is really nothing, nothing, like going down to the garden in temperatures below freezing and opening the flimsy plastic cold frame and cutting some lettuce for dinner.  This picture is of just slightly wilted lettuce on a really cold day, but I also have mache, which doesn't even need the cold frame, and some arugula and some mustard greens-- parsley, cilantro.  Plenty of things that no more die in the winter than the grass does. It's  hard to convey what a pleasure these soft fleshy alive leaves of bright lettuce are to dry chapped fingers. They taste pretty darn good too!
